Chilled Lemon Zucchini Salad
The simplest, most refreshing summer salad! Tangy and cool, this salad makes a great side dish, or is perfect on its own, topped with some fresh feta or parmesan. This recipe is also easily adaptable to whatever you have in the fridge or pantry - let's get creative!
Ingredients
(Serves 2-4)

1 medium zucchini or 2 smaller ones

Juice from 1 lemon

1 tsp of salt

1/4 tsp of pepper

3 tbsp of olive oil

1 tbsp of apple cider vinegar

1 tsp of honey
-
1/4 cup fresh parmesan or feta

1/4 cup toasted walnuts, pine nuts or almonds (whichever you have on hand)

A handful of your favorite fresh herbs, roughly chopped (I typically use parsley, basil and oregano or mint)

Dash of red pepper flakes (optional)
Directions
1. Prepare a large flat tray or dish with 1 tbsp of olive oil and set aside.

2. Using a mandolin (or your expert knife skills), thinly slice the zucchini lengthwise. Line the tray with the long slices of zucchini in one single layer, it's okay if some of the pieces overlap slightly. Set aside.

3. Juice one lemon, then slowly pour 3/4 of the juice over the zucchini slices. Set the remaining juice aside until the end.

4. Cover the tray with plastic wrap and place in the fridge for a minimum of 1 hour or up to 3hrs.

5. While the zucchini is chilling, preheat the oven to 350°. Using a baking sheet, line the nuts of your choice in a single layer and toast in the oven until lightly browned (between 6-10 mins depending on the nut). Remove and let cool.

6. After at least an hour, remove the chilled zucchini from the fridge. They will have become very tender from curing in the lemon juice (that's what we are looking for)! At this point, transfer the zucchini to a serving dish and arrange the zucchini slices into ribbons along the tray.

7. In a small bowl, mix the remaining lemon juice with the apple cider vinegar, olive oil, honey, salt and pepper. Taste and adjust as necessary.

8. Pour the dressing over the tray of zucchini and top with the chopped herbs, grated parmesan or feta, toasted nuts and red pepper flakes if you wish! Serve immediately and enjoy!
