Traditional Pasta Sauce

Monday night is pasta night at my house! I'm not sure when this tradition of stuffing ourselves with delicious carbs at the beginning of each week started, but I shamelessly LOVE Mondays for this reason alone. This traditional pasta sauce recipe is typically used on a weekly basis and can be adapted to include seasonal veggies (I love zucchini and Tuscan kale mixed in) or a meat of your choosing! Simple, savory and oh so delicious, you may just want to make Mondays your pasta night too!

Ingredient List

  • 2 cans whole Italian tomatoes (pureed also works, just make sure they are Italian)

  • 1 medium yellow onion

  • 2-3 cloves of garlic

  • 1-2 whole anchovies (in oil)

  • 3 tbsp olive oil

  • 2-3 basil leaves

  • salt to taste

  • pepper to taste

  • fresh parmesan cheese 

  • veggies and meat optional

Directions

  1. Chop the onion into small pieces and mince the garlic and anchovies.

  2. Set a large sauce pot on medium heat and add 2 tbsp of olive oil

  3. If using whole tomatoes (you can also use fresh tomatoes, just remove the skins first), blend in the blender until smooth or use an immersion blender at step 5.

  4. Add the onion to the pot and stir coating with oil. Let the onions cook, stirring occasionally for 2-3 mins until they are fragrant and start to become translucent. Turn the heat down slightly (low-medium), then add the garlic and anchovies. Stir and let cook for another 1-2 mins.

  5. Turn the heat to medium-high, then add pureed tomatoes to the pot or use an immersion blender to smooth the whole tomatoes. Add the basil leaves. Stir all the ingredients together.

  6. Bring the sauce to a boil and add a generous amount of salt (about 1 tsp to start) and a bit of pepper. Then turn the pot to a simmer and let simmer for about 20mins.

  7. While the sauce is cooking, boil the water for your favorite noodles. 

  8. After 20mins, taste your sauce and add salt or pepper as needed. Add the last 1 tbsp of olive oil. Your sauce is now ready to enjoy! <3

  9. Don't forget to add lots of parmesan cheese and top with fresh parsley if your heart desires!

** If adding veggies or meat, do so at Step 4, one minute after you add the garlic and anchovies. Brown the veggies and meat lightly before adding the tomatoes into the sauce**
